Sunday Soup! (I almost forgot again!)

OK here goes....

Cheesy Vegetable Soup

2 lbs frozen veggies of your choice- California Medley is good
3 cans fat free chicken broth
1 can Rotel (tomatoes with green chiles) You can cut this back if you don't want it too spicy or you can sub regular diced tomatoes.

Dump all ingredients into a large pot and bring to a boil. Let simmer for 45 minutes.
Add 10 oz. Light Velveeta. When it's melted, you are ready to eat!

Serving Size: 1 cup
Points: 1 point per cup

This is also yummy served over a baked potato!
